How to Choose the Right Grid Size for Your Baking Racks


There are a few different things to keep in mind when purchasing baking racks for your bakery. The materials they’re made from, their durability and their resistance to heat are all very important factors to consider. Grid size is another factor to keep in mind; however, it may be tricky to figure out the grid size you need for the types of baked goods you make.

 

Why Grids are the Way to Go

As the purpose of a baking rack is to facilitate the even cooling of baked goods, which is achieved by manufacturing these racks with material, in our case, high-density polypropylene, arranged in a grid-like pattern. The vertical and horizontal strips of polypropylene that are used to create this grid can be arranged to create larger or smaller spaces within the rack. The reason why a baking rack cannot consist of strips that run just one way is because warm baked goods will sag between these strips.

 

Smaller Vs. Larger Grid Sizes

A narrower grid is ideal for a kitchen in which smaller, more delicate baked goods are made. Again, the smaller spaces prevent these goods from sagging during the cooling process. Smaller baked items also do not need as much air circulating beneath them to cool off quickly, so the smaller spaces don’t increase cooling time. A baking rack with a larger grid size works better for baked goods that have a larger surface area on the bottom. If your bakery specializes in either smaller or larger baked goods, investing in racks in either end of the size range would be reasonable. Most bakeries, however, would benefit from purchasing baking racks in a range of grid sizes to accommodate a variety of baked goods.
